While vacationing on Sifnos throughout the summer months during '85, Filippo Miano made a decision to get away from his career of cooking for restaurants throughout Milano in return for starting his signature place within Greece. In 1988 he arrived back to Sifnos with his spouse Loretta (unquestionably the brains and beauty of the duo) to open the initial Mamma Mia on the traditional beachfront of Platis Gialos. Nearly ten years down the road during 1997 the Mianos opened up their second dining establishment away from the coast in the main town of Appolonia.
During the same year a young and ambitious Marco de Rosas commenced doing work in the kitchen and following four years of spectacular culinary arts abilities, he was a part of the family and co-owner of Mamma Mia at Platis Gialos. Later, the first-born son Andrea Miano opened Palmira Bar and Cafe (also on Platis Gialos) with Vasillis Vlachogeorgakis and Rebecca Vickingsson. Their youngest son Pietro Miano (enlightened at fifteen because of a gluttonous visit to Sicily to find out about the southern half of his relatives) attended culinary arts school at Scuola Alberghiera in Milano and today has the position as head chef at the location in Apollonia.
Even as Mamma Mia has consistently served up the classics from homemade pasta and traditional pizza, to carpaccio and filetto, they continue being passionate about whatever it is the nearby farm owners and fishermen have for their kitchen. Obviously they don't rely on solely on Greek ingredients... boatloads of bufala mozzarella and Calabrese salami journey across the sea weekly to be served up at your table.
